So I’ve begun making stock from the turkey carcass from the weekend. My soup pot is not quite tall enough to fully submerge the turkey. Am I ok on this (thinking I can keep the water boiling after I remove the turkey), or should I pull the carcass out and smash it with a hammer or something?
The carcass will eventually collapse. Just keep poking it with a wooden spoon and shoving what you can down under the surface. Keep it at a simmer; don’t boil too hard or your soup will be cloudy.
It should simmer long enough so that you should be able to snap the leg bones with your hands. Then you know they’ve given up all they have to offer.

The main body with the ribs and such can be broken apart with main force. Remeove what meat you can before simmering, but do simmer all the bones and misc odd bits. I add garlic and herbs for the simmering, it makes it smell nicer.
I call it turkey carcass soup.
You should be able to pull the carcass apart at the joints. After you’ve pulled the legs and wings off the main body, you can break the ribs, if necessary. And it will collapse fairly quickly if you keep poking it.
We now have proof Lynn "pokes’ dead animals. I expect a thread in ATMB complaining about this despicable Mod behavior soon.
