Yes, there are still leftovers from Thanksgiving. Tuesday I put the smaller bits of turkey – stuff that came off the wings, legs, various pieces of white and dark meat – into a pot with a can of Rotel’s mild salsa and several dashes of Tapatio and simmered it for a while. Last night I rolled the meat up in corn tortillas and fried them. I ran out of tortillas, so there’s a little meat left. Yep, leftover leftovers. I ended up with eight fatter-than-storebought un-fried taquitos in the freezer, which will make for a quick meal or two another day.
Mrs. L.A. was suitably impressed. The meat was tender and juicy, and the salsas were just the right combination. She made guacamole.
My wife just did this last night, the better to put leftovers before my daughter.
Mostly I’ve just been having ‘Thanksgiving diner’ for lunch. I did make FTSBLATs (toasted Focaccia with Turkey breast, Swiss cheese, Bacon, Lettuce, Avocado, and Tomato, with mayonnaise), which were a hit – though Mrs. L.A. couldn’t make it through half of one. (I make big sandwiches.)
Were it not for Mrs. L.A.'s weird aversion to eating the same food until it’s gone, I would not understand your daughter’s reluctance to eating leftovers. But ‘turquitos’ are a nice diversion, and they keep well in the freezer.
Can I please send you my leftover chicken? Thank you.

I am making myself a much-anticipated annual chicken tetarazzini tomorrow with my leftovers (which have been in the freezer).
Of course, you can add salsa and hot sauce to leftover chicken and make taquitos too. 
I like to call it ‘chicken tetrachloride’. 
Damn! I used the last of my leftovers in a turkey tetrazzini two days ago, and I just realized I completely forgot to make myself a Hot Brown this year!
