I am on the verge of becoming Vegan, and my main concern is a stale, boring diet. Not to say that there isn’t a lot of options, I just don’t know many of them. I see lots and lots of recipes online. Can anyone give me their favorite recipes, as well as their favorite products? Thanks in advance!
Not a vegan here; but portobello mushrooms are awesome. Coat 'em with a bit of garlic-infused olive oil, slap 'em on a grill, toast up some buns, and apply your favorite fixin’s; and you’ve got a vegan sandwich that’ll rival any burger. I don’t have access to a kitchen anymore, but I’ve been wanting to try my hand at a vegetarian chili using chopped portobellos instead of ground beef.
A bland diet shouldn’t be a problem. There are very few animal-based herbs or spices, and you can almost always substitute margarine for butter in recipes.

Ribs- Tempei strips broiled/grilled with onions and barbecue sauce. It is important to steam the tempei before grilling.
Collard Greens- use veggie stock and a touch of liquid smoke- simmer for an hour or more.
Black eyed peas- soak and simmer per directions- again with a touch of liquid smoke.
Macaroni and Cheese- Everybody has their favorite recipe.
Sweet Potato Pie- Again, lots of recipes, everybody has their favorite.
Are you considering strict Veganism?
I suggest trolling Indian and Chinese Vegetarian recipes for a bit of variety, lots of flavor and spice there to keep the veggies from becoming boring.
I once saw a recipe for Buddhist (vegetarian) Goose, if you get a hankering for a bit o’ meat, it might satisfy. It involved wrapping some mushrooms and other ingredients in a piece of tofu curd skin…it looked like a real goose/duck breast and seemed to have a meaty texture.
