Vegetarian bangers & mash

I love bangers & mash, but since Boca stopped making their Bratwurst I can’t find suitable veggie bangers. I’ve tried Italian sausage as well as Choriso, but neither of those really goes with the gravy. I find the Tofurky sausages unpalatable–they’re rubbery and tasteless.

Any suggestions?

I recommend Gimme Lean sausage, it has great flavor similar to pork breakfast sausage. I had bangers and mash at an Irish Pub style restaurant a few months ago and it tastes similar to the bangers they used. The supermarket I go to doesn’t stock it all the time, but I always grab some when I see it.

Make your own. There are plenty of recipes available. I often make my own sausage patties with TVP and breadcrumbs, with egg as binder. I mince in garlic, mushrooms, hot peppers, miso, and peppercorns and they’re just as tasty as anything you’d buy in a plastic package – and much cheaper. You can also use tempeh or seiten for an even more meat-like texture.

Would you be kind enough to post links to recipes? And what would one use as a substitute for pig intestines to make 'em into that sausage shape?

I dont think its the “right” type of sausage for bangers and mash, (its like the typical pork link or patty sausage you would get at a place like Dennys) but for my money, the veggie sausage from Morningstar Farms is the best on the market, hands down…

I generally like most Boca products, and cant stand most Gardenburger brand stuff, but if you havent tried Morningstar Farms, you should make a point to give them a shot.

Mock sausage
Tempeh sausage
TVP sausages

To get the torpedo sausage shape rather than forming patties, just buy sausage casings. Most large supermarkets sell them. Butchers may sell them too, but they’re more likely to use intestine than the vegetarian polysaccharide casings.
