In a few weeks Ill be embarking on a road trip with some friends. Im vegetarian, and they aren’t. In the interest of keeping things simple, Im thinking of volunteering to cook the few meals we will cook. Any suggestions for vegetarian recipes that can be cooked on a grill, frying pan, or pot, and will satisfy the palates of vegetable hating guys AND will be quick enough to keep them from grilling my flesh?

I thought for sure this was going to be a question about dining on the corpses of all the poor, unfortunate vegetables that get run over while crossing our nations highways.

Boca’s line of sausages and patties might work quite well; there’re chicken patties, burgers, and various flavoured sausages available in most freezer departments. Take a package of hamburger and/or hotdog buns & some condiments & you’ll be set. You can also use field roast cut into strips & fried with onion, garlic & peppers to make a pseudo-Philly Cheese Steak (this one isn’t quite as convincing as the Boca products though). Spaghetti’s always an easy one-pot meal & throwing in some Yves “ground meat” will add protein and texture. All the fake-meat products are fairly similar to real meat in taste & texture & should do just fine in a cooler if you keep the ice fresh.
That’s all I can think of off the top of my head; hopefully will help some. Good luck.
I bet they’re gonna want meat anyway. Why don’t you cook meat for them and do the veggies for yourself?
Warm some pitta breads, a nice mixed leaf salad and some really nice ripe tomatoes, slice the Halloumi about half an inch thick and grill it until it coes crispy on the outside, break it into chunks and throw it inside the split pittas with some salad and sliced tomatoes, slop on a bit of any dressing you like (yoghurt + mint would be good).
oops, don’t warm the salad and tomatoes, obviously; there should be a ‘get’ in there somewhere :smack:
Sionach had a great suggestion. Boca sausages taste really good and the texture is decent as well. (For anyone who has had a tofudog, you know the thoroughly icktastic thing to which I refer…)
Couscous and pasta salads might work, depending on your companions. I have used Boca’s Italian sausage in pasta salads, stuffed poblanos, etc. and nobody has barfed yet. That I witnessed.

I have to cast a vote for the MorningStar veggie burgers–I find them to be far superior to most other brands in terms of meat-like flavor and texture. Seriously, the better’n burgers are almost indistinguishable from the real stuff. Okay, from the fast food version of the real stuff. The spicy black bean ones are excellent, too
My other suggestion would be falafels, if it’s not going to be a pain to bring fresh veggies with you.

No way! Boca Burgers are FAR superior! They taste like the real deal. Especially the cheeseburger variety.

Macaroni and cheese, spaghetti and marinara…any kind of pasta and sauce combination is easy and filling. Though Morningstar and Boca have really tasty products I find that many carnivores don’t enjoy wannabe meats, often for purely psychological reasons. Grilled cheese is always a favorite. For a fun twist, grab some flour tortillas and grill up quesadillas. Many companies make cans of vegetarian baked beans which are a quick and tasty side dish. I find that many vegetable hating guys can deal with potatoes and onions; cut 'em up, drizzle with olive oil, salt and pepper, maybe a touch of tobasco or garlic powder, wrap in foil and throw on the grill. If you can convince them to go out on a limb, grill portabello mushroom caps with a pat of butter and some seasoning. You can throw these on rolls with ketchup, mustard, tomato, lettuce, etc…very tasty. Good luck and drive safe

D’oh Im not sure why veggie burgers have never crossed my mind. Ive forced them all to eat Bocas at some point, and none complained. Also cant believe i didnt think of pasta. Hell, if they want, I suppose they can throw some chicken or something in (im not a total nazi about not eating meat, I just dont want to). Thanks guys, if there are any other suggestions id love to hear em, Its a long drive to the Gulf Coast…
Is there a canned vegetarian chili out there? That might work pretty well.
I just went on a week-long camping trip where I was staying in a cabin and mostly eating out of a cooler. One of the other guys was vegetarian and didn’t like the food that the camp was providing, and I pointed out that I had pita bread, carrots, cheese, trail mix, dried apricots… there’s all sorts of travel snacky foods like that you can carry that don’t involve meat.
Where on the Gulf Coast are you headed?
What I like to do when I grill is get those big old portabello mushroom caps. You can marinate them in spiedie marinade then slap 'em on the grill. Then slice up some Italian bread, add a slice of provolone and a slice of tomato… damn yummy. Hope that’s not to vegetable-y for your guys.
I second the recommendation for Boca sausages. They kick ass. I also agree that Boca’s burgers are the best burgers. Even their vegan burger tastes authentic. Have you ever tried Veat? It takes exactly like pork, esp. when made with apricot duck sauce. I think you could fry that, then slice it.
