Not getting the problem–why isn’t the clue referring to “this NFL team’s logo” instead of to “This NFL team”? Indeed, if they wanted to refer to the team, they could have said, “This NFL team is the only one whose logo is a plant.”
We might have a better argument either way if we knew the category of the Final Jeopardy! answer.

This is convincing to me. The clue as given is ambiguous whether it’s looking for the team or the logo. If it were unambiguous (as the above is), then offering the logo would be incorrect.
