What am I supposed to do with this cube steak?

Punch someone in the eye, then hand them the steak and walk away muttering “Sorry…”

Properly prepared CFS isn’t tough. A lot of cooks don’t tenderize the steak enough.

The Pioneer Woman makes sandwiches out of her cube steak. I’d like to try this sometime, but every time I bring cube steak home, my husband insists that I make CFS from it.

I’ve made that sandwich on several occasions. It is heart-stoppingly tasty.

The way I used to do it was to season it with garlic salt and pepper. Fry it like a burger. Two slices of bread, and a white condiment. (As a kid, we were a Miracle Whip house. For the last few decades I use mayo. But MW does compliment this sandwich, I think.) Put the meat in the bread. Eat.

The only problem with cube steak sandwiches is that I always seem to find a piece with gristle. (Or connecting tissue. Whatever.) And it’s always the last bite for some reason.

On the rare occasion I buy cube steak, I use it for Lazy Stroganoff. Cut the cube steak into bite-sized bits. Cook with chopped onion, a little minced garlic, salt, and pepper. Add cream of mushroom soup, sour cream, and Worcestershire, and serve over egg noodles.

If you don’t mind frying as part of the process, you can make this insanely delicious and easy dish with cube steak:

Season steaks with pepper (no salt) and dredge in flour. Saute in some vegetable oil until browned and layer in an oven-proof/stove worthy pot with onion soup mix, about 1 envelope per pound. Pour in beef stock to cover-about 2 cups per pound (I deglaze the frying pan with some of it first). Cover and bake at 325°F for about an hour. Remove steaks from stock and keep warm. Thicken juices for gravy with cornstarch or flour and water. Serve over mashed potatoes, rice, or noodles.

I made the Alton Brown swiss steak linked up the thread a bit - y’all, that shit was off the CHAIN! We had it over egg noodles, although we don’t really need to be eating egg noodles. I added some mushrooms and deglazed with some red wine. Absolutely delicious.

Cut it into small bits and make Chili.

Cube steak has got to be one of the worst cuts of beef butchers offer. I don’t use it even when called for.

Isn’t cube steak tough, no matter how you cook it? I’ve had that stuff in the slow cooker for hours and it’s still like shoe leather.
