What are some good 'healthy eating' cookbooks

I want to eat healthier. I don’t really care about organic living or getting back to nature but I would like more whole wheat, fruits, vegetables and fiber in my diet due to the health benefits and weight loss aspects these offer. But I am used to prepared foods, not making food myself.

Are there good (preferably popular so the library will carry them) books that show how to make simple recipes that taste good that are relatively healthy? i.e., high in fiber, fruits, vegetables, etc? They don’t have to be low fat, but that would be a nice plus if its possible.

They also don’t need to be high protein recipes either since I drink a protein drink a day with 60g protein in it, so i’m not going to be going deficient anytime soon.

I would recommend any of the Moosewood cookbooks. They are based on recipes at a vegetarian restaurant in Ithaca, NY. They have one that focuses on low fat recipes specifically, and one called Sundays at Moosewood that focuses on international recipes from around the world, and several more. I think I have 4 of them. The international one is a little more complex but has thorough instructions. They are very popular and I’ve seen them in libraries here.

I’d also recommend a lesser-known one called More-with-Less Cookbook by Dors Jantzen Longacre. It is a companion to a book on overall frugality called Living More with Less. They both really get down to basics, and based on your posts I think you’d find both books interesting.
