What are some yummy things to make with duck stock?

I poached some duck today because I need the meat for duck salad. Now I have cupfuls of yummy-smelling stock and no idea what to do with it. Does anyone have any good recipes?

My husband and I used to eat a lot of duck. The stock makes a very rich and delicious base for a soup. Just add some minced onion and celery and a handful of rice. Salt and pepper as desired. Simmer until the rice is no longer crunchy.

I thought about soup. And Groucho. Do you put duck meat in the soup too? I was thinking I’d have to go out and buy another duck, just to have meat for the soup.

Mr. Neville and I usually make egg-drop soup or something similar when we have a duck or turkey carcass around. We do that because that’s our favorite soup that really depends on the flavor of the broth and isn’t better with some cheese added (we keep kosher, so no meat stock and cheese together for us).

You can put duck meat in the soup, or chicken, or not put meat in it.

I made a wonderful soup once from duck broth, granny smith apples, port wine, and sage.
