What Are You Cooking?

Tonight we’re having tortilla soup (sans the tortillas–my husband’s weird that way) and cheddar-garlic biscuits.

I understand the words individually, but the overall meaning escapes me… :smiley:

Okay, tonight’s dinner:

Large wild shrimp marinated in lemon juice and pepper and sauteed in olive oil

Organic rainbow chard sauteed with garlic and olive oil

Couscous

Krenshaw melon tossed with organic peppermint and dressed with a sherry vinegar/balsamic vinegar mix with a little kosher salt

The chard and mint were from our garden, which is always nice.

Dinner tonight was a big salad of bulgur, chopped roasted zucchini and red and yellow bell peppers, minced shallot, a handful of pine nuts, chopped parsley, a can of chick peas, and some diced up feta cheese. This was dressed with a mix of lemon juice, lemon zest, a little honey, cumin, cayenne pepper, salt, and olive oil. Pretty good, and I’ve got leftovers for lunch tomorrow! I roasted the peppers myself, and added the zucchini because it seemed like it’d be good, but if I used jarred roasted peppers and skipped all roasting, the whole thing would have taken 20 minutes.

Makes me hungry to read! We just got back from vacation and have been on a vegetable spree therefore (vacation food not being particularly green): gazpacho, bean&veggie burritos, peanut noodle salad. Except for that humongous Cordon Rose cheesecake currently cooling in our fridge. No vegetables in that.

I spent about 2 hours yesterday making samosas for the first time. Now they are sitting in the fridge chilling until I bake them tonight for dinner. I hope they taste ok.

My other big project is perfecting my ability to make homemade yogurt because I have become a fan of yogurt cheese but it is really expensive to make y. cheese if I have to buy the yogurt at the store.

This week I made a Chicken Florentine experiment that turned out nummy & also curried rice with carrots & green onions…

Apparently it’s going to be “something with noodles” but as it’s not my turn to cook tonight, I won’t find out until later.

Maybe it’s because I bought reduced fat, reduced salt bacon, or maybe it’s because of something else altogether( or maybe I’m weird), but the bacon odor was not a pleasant one which makes you crave bacon. The bacon seems to taste ok, it just didn’t make my apartment smell very good.

Last night I made a homemade pizza (the crust was Pillsbury, though! They’re pretty good.) Traditional toppings: mozzarella, sweet Italian sausage, pepperoni, mushrooms, onions, and bell peppers. With a giant salad.

I had some leftover pizza for breakfast! :smiley:

Tonight we’re having Chipotle Tamale Pie.

Browned ground turkey, pinto beans, a can of tomatoes, onions, peppers, mexican seasonings, and chipotle peppers (to taste) all mixed together and heated through. Add cheddar cheese, turn out into a casserole, and top with cornbread muffin mix (mixed to pkg directions.) Bake about 20-25 minutes. Easy peasy!

GilaB, that sounds wonderfuil! I’m going to have to try it.

Yesterday- mac’n’cheese with feta and peppers. Today, maybe pot roast, unless it gets hot, and then the roast veg salad.

Last night’s dinner was a success, so I’ll report it here.

A couple of days ago, I roasted and peeled three fat poblano chiles and stashed them in the fridge for a future recipe. Last night, I cooked up a pound of small shrimp, mixed them up with cooked rice, onions, cilantro and garlic, and stuffed the chiles with this mixture. I made a simple tomato sauce of canned fire-roasted tomatoes, onions, and pickled japapeno bits, and napped the stuffed chiles with this. They went into the oven for half an hour and we ate them with tortillas and sliced avocados and lime wedges. That was some good eatin’.

Too hot to cook here. I’ve been making rice salad a lot lately.

Rice Salad
-2 romaine lettuce hearts chopped
-1 red pepper chopped
-1 green pepper chopped
-spring onion (as much as you can handle) chopped
-cilantro (to your taste) minced
-2 cups rice, cooked and cooled (I like to use brown rice.)

Toss all ingredients in a big bowl.

I make my own dressing consisting of EVOO, apple cider vinegar, a bit of salt and fresh cracked pepper, a little mustard, minced garlic, and some honey.

Im having a lazy day today - its just to hot. From what I can see the temp here is 19c today (ok so for you lucky in the US who get real weather I know it isnt hot for you but for me anyway it is boiling! The sun dont visit here often!) Ive decided to put a markies cottage pie in the oven with some chips! Then I’ll put some pie, chips and beetroot in a sandwich - yum! Ill polish that off with some irn bru methinks

Yesterday we had my 6 year old son’s favorite food–pasta with homemade pesto. Tonight I’m doing a chicken with broccoli and red pepper stir fry. Tomorrow we may have turkey tacos–I made the meat filling already (ground turkey, ancho and chipotle chili powders, onion, cumin, oregano, tomatoes, salt) and I just need to make some shells and some chips and grate some cheese.

This weekend there are grilled burgers on tap.

I’m a bachelor for a week, so out came the crock-pot. Overnight I cooked up a pork tenderloin with onions, garlic and pepper. Added some home-made BBQ sauce this morning, and tonight I shall be feasting on pulled-pork sandwiches. Then some will get stirred into a mess of beans as a mega-side dish for something later on this week.

Is pork tenderloin good crock-potted? I’d think it would be dry.

Tonight will be fried pork chops, brown gravy, mashed taters and peas.

I 'm going to make a ‘raw food’ cheesecake from Vegetarian Times. The crust is raw madadamia nuts, dates, and coconut. I’m really curious as to how it will turn out.

Once I finish my paper (last one of the summer, yippy!) I’m going home and making up some jasmine rice and a potato and lamb curry. Found some lamb for cheap at the grocery store, so I’m treating myself tonight!
