Friday I made a white-sauce pizza for the first time. I used Trader Joe’s pizza dough because it’s really cheap and less time consuming than making dough from scratch. We also had an opened jar of alfredo sauce in the fridge, and I thought I’d better use it for something. I cut up some chicken breast meat and cooked it with some garlic powder (I’m out of garlic! :eek: ), a little salt, and some freshly-ground black pepper. After stretching the dough into a perforated pizza pan, I smeared it with a light coating of olive oil. On top of that went the alfredo sauce, quattro formaggio and mozzarella (I wanted to use all mozz, but we were short), a buttload of sliced mushrooms, and diced tomato. The SO nixed the onion I wanted to put on, and we didn’t think of spinach. It turned out pretty well, but I think it would have been better with actual chunks of garlic, some onions, and spinach.
There’s a Korean sushi/teriyaki/be bim bap place around the corner from the office. They give you entirely too much food. As a result, I had a quart of rice (some of it with teriyaki sauce on it) in the freezer. Thursday I chopped up some chicken breast and sliced some celery and sautéed it in sesame oil with chopped onions and some frozen peas and carrots seasoned with garlic powder, salt, and pepper. I made an omelette and put it aside. I added the thawed rice and fried it a bit, and then added some soy sauce. When it was done I sliced the omelette and mixed it in. It turned out quite well. The SO pronounced it better than what we’d get at a restaurant. (I though the teriyaki contamination gave it an interesting, but good, flavour.)
Yesterday morning I made bacon, egg, fried (in bacon grease) potato, and cheese burritos.
That reminds me. I need to make chiles rellenos soon.
We cheat on the coleslaw. Just buy a bag of coleslaw and mix in bottled dressing. It’s still better than anything we’ve had in a restaurant.
I want to make a sinchronizada. I bought some avocados to top it with, but the SO never made guacamole (that’s her job) and the avocados got tossed. I may just buy a container of guac-ish stuff. It’s hard cooking for two. She has to be ‘in the mood’ for certain things. My ‘mood’ has much wider parameters.
Ramen noodles with chicken bits, mushrooms, and chard for lunch today. NOT the enclosed “flavor” packet, I used chicken boullion and a dash of soy sauce and garlic.
Before that… hm… baked chicken with Penzey’s Tuscan Sunset mix for seasoning (some of the leftovers are in today’s lunch) and a pan of shepherd’s pie (American style, with beef), with red peppers, onions, and mushrooms.
Last night it was loaded baked potato soup in the slow cooker. Potatoes, bacon, sour cream, green onions, topped with shredded cheddar and a drizzle of hot sauce. With biscuits. Tonight we’ll have the leftover biscuits with stuffed green peppers. On the list to make this week is fried rice with egg rolls.
It was cold and foggy yesterday, not at all summerish, so I made a lasagna. Italian sausage, mushrooms, and thinly sliced zucchini. Good, and we have a ton of leftovers.
Also made pizzas last week. On traditional, with red sauce, onions, and sausage. Had another ball of dough left over, so a couple days later did a nontraditional pizza - white sauce, prosciutto, peas, and mint. It was great!
Kielbasa, sauerkraut, and mashed potatoes yesterday. I used a different-sized pan than usual without realizing it, so I misjudged and now have leftover potatoes and kraut.
Bought a bag of itty bitty key limes and made pie. Easy-peasy. That was dessert for the longest day clambake on the grill. It came about because yesterday me and hubby were at the fish store (looking for catfish) when we saw that mussels were 3 dollars a pound and cherrystone, Littleneck and Longneck clams were 4 dollars a dozen (we got 1/2 a dozen each) and jumbo shrimp with the heads still on were 5.99 a pound (instead of 7.99 a pound with heads off). We already had potatoes, corn on the cob and kielbasa at home. And some Killian’s Red.
I want to add that the reason you see a headless shrimp on the plate is because the shellfish was so inexpensive we had to add stuff to meet the 20 dollar card minimum. We fed 5 easily.
Breaking off from the usual (chicken, chicken and more chicken) tonight to make something from* Lidia’s Kitchen* (PBS Saturday cooking show). Very simple:
Saute onions and Portobello mushrooms.
Top with Halibut, and bake for about 10 minutes.
Got some left over rice from last night on the side.
I’ve been on a portobello kick lately. They are sooooo good.
I’m in a rut. I haven’t had the energy to be creative for a bit, between working long hours and exercising (yay!).
I’ve been making alot of lentil stew. I make it with tomatoes…and when I want an extra kick, I put some andouille sausage in to fake up a jambalaya type dish.
I grilled up some tilapia last night. Made a marinade with olive oil, fresh squeezed lemon juice, garlic, salt, pepper, parsley and basil. Steamed some brown rice and broccoli for the sides.
This morning I made 15-bean soup in the crock pot. Didn’t soak the beans, didn’t use the flavor packet that comes with it (per America’s Test Kitchen instructions). I used a quart of Swanson’s chicken stock (recommended by ATK) and two additional cups of water. Microwaved some frozen chopped onions, soy sauce, garlic, and porcini mushroom powder and added to soup. Boiled on high for about five hours then added a small box of crushed tomatoes and half a package of frozen mixed veggies. Left on high for another couple of hours. I’ve already had two bowls. I’ll be eating this for the rest of the week.
