I’m thinking Cajun salmon, mac’n’cheese, and broccoli; or polenta with vegetarian Italian sausage, spaghetti sauce, and quatro formaggio. Or we may eat out.
Pork chops, herbed stuffing, pan gravy, spring peas with pearl onions and mushrooms. I’ll be enjoying some Pinot Grigio with mine, but my hubby won’t; he hates wine!
Here’s how I do my chops: Season the chops with salt, pepper and Italian herbs; sear in a heavy pan in butter, transfer to a 325 oven for 15 minutes; during that time, I whip up the stuffing, (which I’ve assembled ahead of time), and the pan gravy; for the gravy, I deglaze the pork chop pan with some of the wine I’ll be drinking; add about 1/2C of chicken stock-from-a-box, and thicken it up with a slurry made from corn starch and a bit more stock.
After 15 minutes, I spoon a little of the gravy over each chop, and top each one with a mound of stuffing, bake for 5 more minutes or so. I serve it with plenty of extra gravy.
Banh Mi from the Momofuku cookbook. Lucky me, I made the terrines a few months ago and have them in the freezer, and a friend of mine gave me a couple baguettes, also in the freezer, so it’s next to no work. Just had to make the pickles (which only take about 10 minutes) and pick up some cilantro from the store. The Kewpie mayo and sriracha are staples in the fridge.
I loves me some bahn mi. But I never get any. There are a couple of places near work where I can get them, and I know of one place in Bellingham that has them. But I balk at paying eight bucks for one, since I know where to get them for two dollars. Unfortunately, it’s beyond walking time from the office and getting there by bus would take about as long.
Peas, corn, broccoli, cauliflower, tomato paste, potato, oats, honey, walnuts, flax seed, lecithin granules, bananas, crushed pineapple and blueberries. Too complicated to explain how it all goes together.
I ended up using 4 breasts and cooked them at 375 for 30 minutes. I pulled them out of the oven and the middle two weren’t done so I put them all back in at 385 for another 25 minutes.
They were the moistest and most flavorful chicken breasts I have ever had.

Mind-boggling (to me) amounts of alcohol will be consumed by others (diet Dr. Pepper, and some Martinelli’s sparkling cider for me due to current medications)
