What's for dinner tonight?

Grilled porterhouse steak with sauteed bok choy, garlic sauce and rice. I am not a vegetable person but I do love my nicely crunchy bok choy. Dessert was my favorite holiday cookie: pfefferneusse. Thick gingerbread meets delicate icing perfectly.

It’s my husband’s birthday, so I’m making his favorite - English muffin pizzas. In addition, we’ll have Mocha Mexicali wings from Kroger and my own garlic parmesan wings. Definitely not healthy, but yummy.

I have some beef chuck in the fridge for making beef stew tomorrow.

Late dinner here. Red beans and rice w/ pickled pork and andouille sausage.

Boyfriend had a Christmas party tonite, and I didn’t go. So, I went to Chick Fil-a. Chicken sandwich, waffle fries and a Coke Zero. And then a couple of squares of Trader Joe’s belgian chocolate.

I had beef tongue sandwiches. Never had 'em before and I was feeling adventurous today. I probably won’t make it again.

I had the grilled cheese sandwich filled with mac & cheese and barbecued rib. It was really good. And the apple pie sandwich for dessert: I think it had apples, brown sugar, caramelized pecans, cheddar cheese, and some other stuff.

If you are in L.A., you have to check out the Grill 'em All truck. The Behemoth, Molly Hatchet, and Wit-E are very tasty.

I had Mexican Lasagna tonight (again from allrecipes.com).

Cooked some ground beef and mixed it with refried beans, garlic powder, oregano and chili powder.

The added half to cover lasagna noodles in a 9x13 pan. Then added diced tomatoes and mozzarella cheese followed by another layer of lasagna noodles and then the remaining beef/bean mix. Then added 2 cups of water and 2.5 cups of salsa. Next cooked covered at 350 for 1.5 hours.

Finally added sour cream to the top with sliced black olives, mexican blend cheese and then a layer of pepper jack cheese. Then back in the oven for 10 minutes at 360 uncovered.

Man, it was good. Ohhh, man it was good!

We went to a local brew pub last night, so I’m making the Cajun salmon tonight.

My father used to use that recipe, sparky! He used Club Crackers for it.

Sometime he’d use it with thick-cut pork chops, too. He set the oven at 325 degrees for those. And I’m not sure of this but I think he may have turned them halfway through the baking process. If so, I imagine it takes some care to turn them gently so you don’t lose any of the breading.

Tonight we are having leftovers:

Cuban black beans and rice, a favorite.
Some chicken breasts he smoked earlier this fall.
A tossed salad with bacon and cucumbers. Does anyone ever toss a salad with crushed Mexican flavored tortilla chips? We do.

I took a fresh peach pie out of the freezer for dessert.

I think I’ll try making ravioli for the first time. I have leftover roasted chicken and I think I’ll mix that with spinach and cheese and use the recipe for pasta dough off the back of the box for my new ravioli press thingy.

First I have to finish making lemon sugar cookies for the Christmas cookie exchange at work, so we’ll see how much energy I have left when that’s all done. I might forget about it and make chicken salad sandwiches instead.

But I am aching to try homemade ravioli.

I should finish off the last of the beef stew I made earlier in the week.

It makes me laugh that an adult male’s favorite meal is English muffin pizzas!

I am having some banging lasagna with Boca Ground Crumbles for dinner and I have been waiting all day for it.

Big ol’ piece of beef cooked in the crockpot, with gravy and mashed potatoes. Green salad, home-made applesauce, and some cheddar pierogies with sauteed mushrooms for the vegetarian amongst us.

Tonight, extremely simple and lazy! It’s just mudgirl and me here, so I’m making sloppy joes on whole wheat rolls (addition of cheese optional), French fries (frozen) and serving some chilled canned fruit with it!

The sloppy joe mix is ready, just waiting for the fries to bake up!

“Laugh” as in “I think it’s cute”, not as in “I am laughing at your food choice because I deem it silly or some other such judgmental expression.”

And I have made my pseudo-meat lasagna many times for heavily meat eating crowds and no one could tell the difference. It rules!

Meatloaf made from a combo of ground turkey and beef, mashed potatoes, carrots from my pal’s garden, whole wheat rolls–it’s comfort food time!

Dessert will be a frozen WW dark chocolate/raspberry bar on a stick.
