What are you doing with your Xmas dinner leftovers?

We are having turkey, brie, and cranberry sandwiches with mashed potato cakes on the side. What are you doing with your leftovers?

Same as Thanksgiving, since it was pretty much the same meal.

Turkey stock got made today, and that will last a few weeks thanks to the freezer.

Lots of left-over turkey. Some of it got chopped up today and went into a scramble. Delicious. I mean, really delicious! Some of it went into the freezer, to be pulled out when what’s in the fridge is gone.

Mashed potatoes get the same treatment. Pull them out of the freezer whenever I feel like having heated up potatoes or maybe to make some potato cakes with breakfast.

It all should last a month, but will probably be gone in less than 2 weeks…

We had brie en croute [brie in pie crust with apple almond and a spritz of vietnamese cinnamon] Roast lamb, and deep fried tempura yam slices and artichoke hearts with homemade brownies for dessert.

Still had a little brie and lamb left, and a couple brownies. I did the leftover veggies as lunch and we are doing a late dinner of more leftovers with wilted spinach as the veggie.

Ham sandwiches here, eaten today and those traveling tomorrow are taking ham sandwiches with them. We all ate most of the mashed sweetpotato and the green beans today.

I’m taking some beef tenderloin and savory bread pudding to work tomorrow and using the rest of the beef to make either beef fajitas, nachos or mu-shu.

I have two growing sons. What are these “leftovers” of which you speak? :confused:

I’m making turkey soup. I only made a couple of sides, and there are only three of us humans here. I roasted a small turkey breast, and we are having turkey sandwiches and turkey soup. Possibly turkey pot pie, depending on how much soup is left.
