Banana muffins or bread.
Mostly baked goods. I could make scones (choc chip or blueberry), biscotti, lemon bars, cheese cake all from scratch. I have boxed brownie mix and an angel food cake mix in the pantry. I could bake bread, which takes longer but is very little actual work.

I have a really well stocked pantry. My goal is to go to the grocery about twice a month, which means at any one time, I have a couple of weeks of food on hand. (We often pick up a few fresh things in between). Then… I have things like a couple of turkeys in the freezer. We pick those kinds of things up when the sales are really good.
So the better question is what I couldn’t make. 
Anyway, first thing that come to mind: We made a couple of pot pies from turkey leftovers. There are two, premade, in the freezer and they just need an hour to bake.
Second idea is meatballs, since I make those in large batches and freeze the extras. I season them neutrally so I could add them to spaghetti and tomato sauce, put BBQ sauce on them, or do mushroom gravy and egg noodles. I’m out of fresh mushrooms at the moment, but I do have mushroom soup in cans and some dried mushrooms as well.
Only what’s on hand right now? That lets out a risotto, because I’m out of arborio rice.
One hour of prep time? I’ve got plenty of dried beans, but if I can’t soak them overnight, forget about chili or baked beans.
I think my best options are drop biscuits or a penne pesto salad. Or I might get creative and try making pesto biscuits.
I could actually do pretty well. I’ve got two blueberry pies I put together and froze about a month ago that just need to be baked.
I could do chocolate chip cookies. I could even do chocolate-chocolate chip since I have cocoa.
I could do a pasta salad.
I could do bread since I have a couple packages of yeast.
I could do chili but it may have to be sans beans.
