Chicken?
Seriously, I would guess anywhere from mild like chicken to pretty gamey, depending on diet, biome and creature. I’ve had fried rattlesnake, and it was pretty mild, but I don’t have a desire to try stronger animals like deer and rabbit. Bottom line? It depends on what dinosaur you’re talking about. Now, what wine would go with apatosaurus a-la-king? And, shallots or garlic butter?

Had both of those often-- wild deer, not farmed, and hare. Both are delicious, and not particularly strong. The first time I had both I was 8 years old, and nothing about the taste turned me off, on the contrary.
Back to the OP, my guess is chicken too, but we better make it a community cook-out.

Chicken is dinosaur. So we already know what some dinosaurs taste like. The main question would be if tyrannosaurs tasted more like chicken, turkey, or duck

Somewhere along the 8 in Arizona (Grand Junction? Or am I thinking of Colorado?) there’s a huge ostrich farm/tourist trap. I had ostrich jerky a number of times in Tucson and it wasn’t too bad.
