Every Sunday I buy a box of pasta - it’s usually a pound in each box - a pound of lean beef, and a couple jars of pasta sauce. The total bill is something like $10. I heat the sauce, brown the beef, and cook the pasta all at the same time. At the end, I combine them all, and then divide them up into Rubbermaid containers. I then eat them cold for lunch everyday. For me, pasta with beef and sauce is so much more delicious cold than heated. It’s somewhat nutritious and filling and satisfying.
On the weekend, I make a big pot of quinoa (cooked in stock), cheese, black beans, salsa, and mushrooms. Divide it up into 4 containers. Friday is food truck Friday, so I don’t bring my lunch.
Leftovers from a previous supper. We are in the habit of making way more than we can eat at supper, and therefore put dishes of it away in the freezer. Since my S.O. is such a great cook, it drives other people at work crazy, particularily the single guys.
