Mine consists of moist wheat bread, sliced baby carrots, tuna with plenty of mayo and a slice of extra sharp cheddar cheese. I sliced the baby carrots down their middle, length wise, so they give a satisfying snap as I bite into the sandwich.
Gotta say, not too bad. Oh, and I washed it down with the remaining flat ginger ale in a cold 2 liter bottle (the only way to drink it!).
Well, I got up at 3:30 this morning, so I’m not sure “lunch” really fits into the day (Oh, and my hubby won’t be home until about 7PM, so a late dinner is guaranteed). So, a couple hours after I got up, I had some peanut butter on a slice of whole wheat bread. Then, around 10:30, I fixed myself a grilled cheese and some cream of tomato soup (again, whole wheat; I typically don’t keep white bread in the house). Right now, it’s almost 2:30 and I’m getting ready to take a (previously) frozen beef pot pie out of the microwave. I’ll butter the crust before I nom it. Butter. Proof that God loves us and wants us to be happy.
Two hot dogs, some BBQ chips and a can of Coke. This was a real treat since I had some teeth pulled recently and these all represent foods I’m not supposed to be eating - or at least wasn’t supposed to eat. Being vaguely naughty makes an otherwise mundane meal taste good. Much better than cold, bland soft foods, anyway.
I was at home today, so I got something something a bit better than usual. I took the idea from the EatingWell Serves Two cookbook for making quick pizzas: I took a piece of whole-wheat flatbread (sold near the pita bread) and topped it with mozzarella and provolone and thin-sliced red peppers and baby fennel. Baked for 10ish minutes at 350 till bubbly and crispy.
Footlong lettuce, tomato, cucumber, red onion, pickles, olives, jalapenos, pepperjack cheese, light mayo, black pepper (lots of), and a dash of salt on whole wheat. And a cuppa joe.
