What have you eaten today?

Breakfast: Trader Joe’s eggwich w/Sriracha sauce.
Lunch: Blackened snapper, and leftover veg w/cheese sauce.
Dinner: Cabbage soup.

Breakfast: 2 eggs over easy, ham, hash browns, hot sauce
Lunch: Gas station pizza (sausage & pepperoni)
Dinner: Red lentil soup, ham & cheese quesadilla

Breakfast: 2-egg ham and cheese omelet, 1 apple
Snacks: 1 100-cal. packet of veggie straws
Dinner: 2 small pork chops in onion sour cream sauce with whole grain rice medley and a pile of steamed spinach

Sounds like Saturday breakfast (only we have bacon).

Do you make the hashbrowns from scratch?

When I make pancakes for The Missus, I make myself a 2-egg sausage-and-cheese omelette.

Breakfast: bowl of Cheerios with blueberries.

Lunch: Pimento cheese sandwich and apple.

Dinner: Poblano peppers stuffed with shrimp, corn and cheese

(We’ve had a bumper crop of pimentos and poblanos from our garden this year!)

Drool…

Breakfast: Steel-cut oatmeal with blueberries, maple syrup, and warm oat milk; chicken breakfast sausages; coffee with oat milk; water.

Lunch: Falafel in gluten-free pitas with non-dairy tzatziki, tahini/non-dairy yogurt sauce, tomatoes, and cucumbers; water.

Dinner: Wonton soup with bak choi and shrimp; hazelnuts; water.

Breakfast is usually blueberries, carrots, celery, tomatoes, cucumbers, peppers, cheese, slice of ham or beef, oatmeal or grits. I like to pick at it while working.

Lunch today was a can of beef vegetable soup (bleah, I’m going to start making my own).

Dinner was homemade Thai style coconut/shrimp soup and a tuna fish sandwich. Had a hotdog as a snack along with leftover from batch of chicken soup I just made.

Two hot dogs with mustard and buns.

Supper
Mini frozen pepperoni pizza. Mixed bowl of cheerios and cornflakes with soursop ice cream and milk topped with wipped cream.

Breakfast: Pulled pork
Lunch: Pulled pork
Dinner: Pulled pork
Snack: Salted nut roll that was unexpectedly “Cinnamon Churro” flavored

Breakfast: A Dr Pepper and a habenero, jalapeno, Monterrey jack cheese snack.

Lunch: Two fun sized Reese’s peanut butter cups.

Dinner: A Country Burger w/cheese (local chain) and I split an order of onion rings with my darling.

Yeah, it was a busy day.

Yep! I usually prefer starchy potatoes for hash browns, but I had some leftover Yukon golds I wanted to use up which worked nicely, too, though not as crispy. Just enough for one serving— just pass over the grater unpeeled, squeeze dry (a ricer works well for this) and fry.

A standard work day:

Breakfast: strong black coffee
Lunch: Home made salad: baked salmon, lettuce cucumber, green beans, boiled egg, horseradish and yogurt dressing. I try to do carb free for lunch, to avoid that post lunch slump.
Dinner: Sicilian sardine pasta, but with tinned rather than fresh sardines, which is actually very successful. Plus a couple of glasses of a nice Claret.

I should add I’m not some oily fish fetishist. It was accidental, my evening meals are usually meat.

My standard workday fare:

Breakfast: Several cups of black coffee
Lunch: Salami, cheese, & vegetable wrap
Snack: Beef stick and cheese stick
Dinner: Soup/stew of chicken and vegetables
Snack: Turkey and cheese

I prefer to peel potatoes for hashbrowns, but leave the skin on for home fries. I rinse and squeeze, rinse and squeeze in a colander to get rid of as much starch as possible; then try them by pressing them with a paper towel. I prefer russets. I made home fries with yellow potatoes once. The Spousal Unit liked them, but they tasted kind of sweet to me.

A bowl of oat groats with maple syrup (made from trees in my yard) with butter and cinnamon, with a small piece of 2 year old swiss cheese on the side, and a glass of cold brewed iced coffee with half and half. A typical breakfast for me.

I normally peel, as well, but this was a quick 10 minute breakfast, and the leftover yellow potatoes I had were small and had very thin skin, so no reason to peel. Russets, though, for sure. I prefer Russets (or similar) as well in this application, but I use whatever’s on hand, as long as it’s not too waxy (like I wouldn’t do this with red potatoes.)

Not much today, but yesterday:

Breakfast: Handful of fiber cereal, coffee

Lunch: Fried egg, yogurt cup

Snack: Half a bag of popcorn

Dinner: One and a half steak fajitas

Dessert: One fun-sized Almond Joy, one frozen banana smoothie

Sounds like that cabbage soup last night. Half a head of cabbage, a packet of Lipton Onion Soup Mix, leftover chicken broth, some baby carrots that were in the freezer, and a small potato. My wife made fun of me because I have a tendency to follow recipes, rather than to just throw things into a pot. But she liked it. (I do improvise once I ‘know’ a recipe, but she’s always making fun of me because I generally like precision. :wink: )
