I might not have ‘perfected’ it as such, but me and miss cactus have made vegetarian lasagne that is really scrumptious. The secret is cottage cheese.

Gnocchi caprese. Dice fresh mozzarella and peeled tomatoes (without the seedy bit), add olive oil and mixed herbs and grated garlic and salt, add gnocchi. The new discoveries are a) you don’t want the tomatoes to be too ripe, or the hot gnocchi will make them go squishy, and b) the smaller you dice the tomatoes and the mozzarella, the more flavour they’ll take in, so you want to dice them nice and small.
