Mine is quite specific as I am not easily offended. For a long time, my husband thought the opposite of Jewish was Catholic, as opposed to Christian. My family is Protestant, but Christian. I felt like he was negating my family’s religion.
Perhaps opposite is the wrong word.

Dogmatics who claim to be “skeptics” (cf “atheist”).
People who refuse to accept/understand that proselytizing is a maint tenet of Christian faith.
People who rail against bigoted stereotyping, then go on to proudly proclaim how they HATE anyone with an ® after their name.
People who work hard to be ‘individual’, then whine when the people they’re individualizing from think them weird. It’s called accepting the consequences, people — build a bridge.
People who don’t believe there’s a difference between ‘being judgemental’ and ‘exercising judgement’.
People who can’t see the difference between government-enacted censorship and private-sector editing.
People who endorse bigoted remarks by saying they’re PC.
People who are certain that opinions at variance with theirs cannot possibly be logically thought out or well-considered, because if the opinions were truly well thought-out, others would have just naturally arrived at the same conclusions. Amounts to answering a debate with, “Yeah? Well, you’re just stupid.”
Socialism offends me, as do the people trying to make America a socialist country.
People who read this post, opine (correctly) that I’m both Christian and a conservative, and assume I’m a Jerry Falwell clone.
Another thing that offends me is hypocrites, and I don’t mean people who did something in their past and now tell others not to do that, that’s not a Hippocratic. A Hippocratic is someone who currently is doing something and tells others not to do it.
Actually, the average Hippocratic doesn’t bother me that much, but when the Hippocratic is a boss, with a “Do as I say, not as I do.” Attitude, that bugs the hell out of me.
Ditto. I can usually remain calm about most things, but traffic morons not only offend me, they make me wish I had nuclear land torpedoes mounted on the hood of my car. Not just divers, but also: people who cruise at 35 mph in the passing lane, people who make turns from the wrong lane, and ESPECIALLY people who do not use their blinkers for ANY reason. You paid for the goshdurned turn signal when you bought the car - you might as well USE it!
Also, it offends me when people assume that, because my last name is Hispanic, I speak Spanish. If we get one more Spanish-speaking telemarker who calls the house, I’m going to commit “hare krishna.” Not that I necessarily have a problem with the telemarketers themselves (no more than usual, anyway), but couldn’t they ask if we prefer a Spanish-speaking representative?

Actually, a “Hippocratic” is a follower of Hippocrates, generally considered the father of Western medicine. And these people usually prefer to be called “doctors.” I believe the word you are looking for is “asshat.”

Believe me, we accept/understand it’s a main tenet, but it still offends us.

Condescension. For any reason. (Particularly if it’s b/c I’m female.)
Lack of manners. Lack of courtesy. People who don’t say “please” and “thank-you.”
People who are short/snappy/rude to service industry or retail employees. People who think they’re “above” such jobs or such people. This is intensely offensive to me, even if I’m not the person being subjected to it.
That’s pretty much it. Lots of things piss me off, but only a few things actually offend me.
When I wake up in the morning after a fantastic dream in another world, the offending enema of reality can really stick it in and break it off.
