This one is hard! I came up with 20 candidates without even doing any searching. But, if I’m limited to 5:

I’d rather go blind - Etta James (thought Beth Hart also does a killer version)

I’ve been loving you too long - Otis Redding (Still the best, though I am also partial to Anita Carter’s cover)

If I could only fly - Blaze Foley (Merle’s version is more polished, but no has ever topped the original)

In dreams - Sierra Ferrell (Yay! 21st century)

I’ll see you in my dreams - Django Reinhardt (I’ve seen pure instrumentals in the nominations before, so I think this is OK. Besides, no one’s ever played it better)
