What is the best Thanksgiving side dish?

My brother’s gravy is the best I’ve ever had. He is the chef of the most prestigious country club in Cincinnati (The Lindner family are members) and most of these rich folks don’t cook for themselves, rather, they tax the shit out of my brother and his kitchen staff for pre-cooked turkeys, meals, etc for them to serve in their mansions.

Anyway…he makes incredible gravy. He starts with about 75 gallons of product and it gets reduced to about 15 gallons. It’s so incredibly concentrated that about a tablespoon or so is PLENTY for your turkey, mashed taters and stuffing. It’s unreal how concentrated the flavor is. It’s far and away the best I’ve ever had.

Sweet potatoes. Even if you don’t do all the brown sugar and marshmallow stuff (which I have no problem with), it’s practically dessert in a side dish.

I don’t like dressing or stuffing. Never have. Nothing else on our table is exclusively a Thanksgiving dish, so I really have no answer. I love baked sweet potatoes (not the sicky-sweet casserole) but I can bake one any time I want. None of the veggies were anything unique, and even mashed potatoes are an ordinary side. And I’ve been known to make pumpkin pies in the summer.

There was a new item on our dessert table this year - one of my sisters made pumpkin mousse and I had enough self-restraint not to take it all and hide it in my car. <insert drooling smiley> But while the dinner was good, there was nothing served that I wouldn’t make whenever, so nothing I’d classify as an Thanksgiving side dish.

We have cut down portions for weight reasons. This (and possibly Christmas) are the only times we make the home made cranberry sauce and mashed potatoes. No pie :frowning:
