My current fave is Cambozola–the creaminess of Camembert with a little Gorgonzola kick.
I also like the Irish cheddars that are becoming more popular around here. There’s a fun version with ale and coarse mustard which is pretty addictive.
I went through a phase recently of craving fresh mozzarella with tomatoes and basil, but it’s been a bit too cool for that recently.
Really, the only cheese I’ve had that I didn’t like (aside from tasteless supermarket block stuff) was gjetost, which tasted like fudge gone wrong to me.

Romano (not just on pasta, but shaved off the block and eaten as is!)
Horseradish cheddar (available in most supermarket delis–at least around here)
In the less strong varieties, Swiss or mozzarella. Or Swiss and mozzarella–packed into a crusty Ciabatta roll and nuked for about 60 seconds.
You simply MUST try “Purple Haze,” a delightfully creamy goat cheese with a strong fennel flavor. It’s like what feta tastes like on Mt. Olympus. It’s also my personal favorite. I think “Cowgirl Creamery” sells it.

Parano - it’s a Dutch cheese intended to rival Parmesan and Romano. IMHO, better than either for just eating slices of it … or melting into breakfast eggs …
