What is your favorite soup?

I just like soup/stew in general. But I suppose if I had to pick one, I’d have to say gumbo is probably my overall favorite.

Roasted Pumpkin.

Diced pumkin, chopped onion, maybe a hint of garlic. Roast in a drizzle of olive oil. Add to stock and simmer. Liquidise. Add a little chilli powder, salt and pepper. KISS.*

PS - the pumkin, onion and garlic need different times to roast, obviously. But it really is simple.

Tom Yum soup. it is what I always wanted hot and sour soup to be but never was.

Split pea! Or roasted red pepper bisque.

Zuppa Toscana for me.

I like me some Hot & Sour, Gumbo, Minestrone and a few others. Zuppa Toscana has a good mixture of textures and a zesty flavor.

Vietnamese Pho with lots of lime, hoisin sauce and Sriracha

New England clam chowder. It’s difficult to find a good one, though. They used to make a perfect one at the cafeteria at work, but they never make it anymore. I’ve tried making it myself, but it never comes out good.

A new IKEA store opened near here recently and a friend and I went. I can’t fit any more furniture into my house, so I bought some hot-smoked salmon (I had room for that). After eating my way through as much as I could with cream cheese and bagel chips, I made this smoked salmon chowder, which was fantastic. It would work with any salmon, really, maybe even any fish. I made half the following recipe and there was still enough to share with my neighbor and leave two large servings for me.

SMOKED SALMON CHOWDER

4 strips bacon, chopped
3 tablespoons butter
1 medium yellow onion, chopped
2 stalks celery
2 carrots, peeled and diced
1 red bell pepper, diced
2 cloves garlic, minced
1 pound Yukon gold potatoes, diced
3 tablespoons tomato paste
2 tablespoons capers, drained
2 cups chicken broth + water to cover
4 ounces cream cheese, cubed
8 ounces hot-smoked salmon, broken into small pieces
1 cup whole milk (recipe called for cream, but I didn’t have any)
1 tablespoon lemon juice
1/2 teaspoon cayenne
1/2 teaspoon black pepper
1/2 teaspoon salt

In a large pot or dutch oven, brown the bacon over medium heat until almost
crispy, then drain the bacon grease. Add the butter to the cooked bacon. When the
butter is melted, add the onion, celery, carrot, and bell pepper and cook, stirring
occasionally, until the vegetables begin to soften, about 5 minutes. Add the garlic
and cook for 30 seconds.

Add the diced potatoes, tomato paste, and capers and stir to combine.
Pour in the chicken broth, add water to cover and increase the
heat to medium-high.

When the chowder comes to a boil, cover and reduce heat to
medium-low, then let simmer for 10-15 minutes or just until the potatoes are
softened and tender but not falling apart.

Add the cubed cream cheese and stir until it melts into the soup. Add the salmon,
cream, lemon juice, and cayenne and allow the chowder to heat just until
everything is gently heated through.

I make a killer French onion soup (with homemade sourdough bread), and my wife makes a fantastic creamy potato soup with bacon. Probably the former is my favorite, but only because I make it less often, so it’s a comparatively rarer treat.

There are simply too many excellent soups to make a definitive choice, with many of my favourites already posted in the thread.

However, whenever I’m feeling poorly or even just a bit down, it absolutely has to be Heinz Cream of Tomato served with a couple of slices of plain white bread.

I also sometimes make chili with no beans or meat, just spices, heavy on the cumin and cayenne.

Aye: split pea soup totally fucking rocks.

Much love here - though it’s an easy sell 'cause I generally hate soup. Onion soup however is more savory fat and croutons than soup when it’s done right :). Hell of a hangover breakfast, too.

I adore soup and could eat it most meals, most days of the week and not get tired of it. A few faves:

Navy bean
New England clam chowder (Not that Manhattan shit tho)
Pretty much any chili
avgolemono
French Onion
a good homemade beef stew (like chili, that counts a soup for our purposes)
Pho
Split pea

And about a zillion others. I even like borscht.

And as a result of being dirt poor for most of my life, I still really like Top ramen, made with an egg drizzled into it and some parmesan cheese and some dried peppers sprinkled on it. Chicken or Soy Sauce (“Oriental”) are my faves. MMMMmmmm… ramen.

How did I miss ramen? I love a well-made ramen with slightly chewy noodles, slices of char shu, and a soft-boiled egg. The tonkotsu stuff is very popular right now, but I OD’d on the rich stuff and nowadays I prefer the clear, shoyu broth base.

Another great one: Butternut squash soup with star anise and ginger shrimp, served up with toasted baguette slices.

Also, there’s a Taiwanese place nearby that makes a fantastic braised beef noodle soup similar to pho, but really rich.

Oh, actually, that reminds me, any one of those Sichuan noodle soups with freshly made noodles is up there on my list, too.

I like minestrone the best. New England-style clam chowder is a close second.
