For 4th of July, I am smoking a 7.5lb boneless pork butt over hickory chips, using a North Carolina-style dry rub. I put it in the smoker at 1:00am this morning, and at 225° it should be pulled pork by 4:00pm. I serve it on a whole wheat kaiser roll, topped with home made coleslaw.
What kind of meat is on your grill/barbecue/smoker this fine Independence Day?
I said hot dogs because we had those for lunch, but we’re having fish for dinner. And maybe some lamb-based soup as well. Why can’t we have multiple choices?
I can’t recall a 4th when I didn’t “burn” multiple forms of meat. It’s a frickin’ feast day around here, yay for excess!
Um, why is it that we can only select one option? Some of us are grilling more than one animal. Hot dogs, chicken, hamburgers, lamb, and some kind of seafood sausage.

I’m having pollo al carbon (chicken) and roast fresh pork and have already had some grilled sausages & hot dogs. I may swipe some lamb gyro from the guy next door if he’ll trade me for some roast pork.
OPM (other people’s meat). Going to the neighbors and I have no idea what sort of food she is going to ruin this time around. Truly one of the worst cooks I’ve known.
Well, I can always get a plate of jambalaya at Blues Fest afterward if it’s truly awful. She doesn’t seem to have any sense of preparation or seasoning. It’s just bizarre. I guess that’s why her husband is so thin.
We did a mixed grill: Rib eyes, pork ribs, brats, hot dogs (for the kids), Yukon gold potatoes, sweet corn and garlic bread with a big Caesar salad and baked beans on the side.
