I started a subreddit to collect those! Feel free to contribute, it’s been dormant for quite a while.
DIY videos, both home and auto. I’ve saved a ton of money doing things that YouTube taught me.
Animal videos.
Cooking videos, especially foreign ones, so I can learn how to do satay or shabu shabu.
Hunting videos, especially with dogs, like greyhound coursing.

Actually he posts as “techmoan”, although in one video he mentioned that he no longer remembers why he chose that name.
Another good series is “Jay Leno’s Garage”: he has a huge car collection, and is very knowledgeable about motor vehicle technology and history.

Agree with this except when it is just one actor talking to another actor. Then it just becomes a yawn fest of politeness, congratulation and avoiding uncomfortable topics, e.g. Actors on Actors. Every director is either a genius or a terrific person. Every actor is soooo talented.
I could watch shows like Demolition Ranch (testing interesting firearms and ammo) all day long.
Charismatic and funny hosts. Sometimes I don’t even care about the subject matter. For example, Emily Graslie, Brady Haran, Robert Llewellyn, Matt Parker, all often talk about sciencey or math subjects that go right over my head, but I don’t care because they’re just fun to watch.
I also never tire of a good “crazy Russian driving” vid or a cutesy animal story.

I’ll second “Irish People Try”. I don’t know what it is about it that sucks me in. Maybe it’s how everyone they choose seems sweet and like-able in the extreme. I like to imagine that all of Ireland is just like that.
But the genre I can’t get enough of is: People reacting to surprise/emotional moments in the TV shows I love. Primarily Game of Thrones and Buffy/Angel.

It seems to be a weird subtopic.
People (especially children) tasting foods that are foreign to them.
People (especially children) experiencing popular culture that may or may not be familiar to them (Kids React To Black Sabbath, for example).
People discussing the minutiae and daily life of their culture, particularly when they’re a transplant.
Classical music flash mobs (or classical music in general).
People (adults over 21 of course) smoking pot.
Drivers who ignore train crossing gates and then get hit by a train.
Some train crossings are guarded by barriers in the pavement that raise. I’ve never seen one. But people still crash into them.
Flash floods, landslides, mudslides
I can’t believe how many of these are caught on camera. I find flash floods amazing when the sky is clear and a 2-foot wall of water and debris are flowing by. How do they know it’s coming?
I saw something like this on Outrageous Acts of Science (or a show like it), some guy was a flash flood-chaser. Basically he monitored weather conditions with a variety of radios and via a variety of websites, combined it with his exhaustive knowledge of arroyos and canyons and whatnot around where he lived, and generally knew where to go (and equally important: where not to go).
