What should I do with my chiles?

I harvested the last of my crop of chiles from my garden this weekend. Now the big question: what should I do with them? They taste a bit like jalapenos and their heat is approximately equivalent to a mild to medium jalapeno. They are smallish – 3-6" long, .5-2" across.

Anybody have any great recipes I should try?

(Mmm, come to think of it a creamy chicken & chile soup recipe would be awesome…)

Chile rellenos! The vulgar call them jalapeno poppers these days, I’ve heard…

I don’t have a link to a really good recipe, but it’s eggs topped with a paste made from red ancho chiles.

Oh, chee-lays! I thought you meant chiles (rhymes with styles.) In that case, the plural would have been chillun.

Put them in a resealable container with vinegar, and make hot vinegar sauce! (Just keep adding vinegar as you use it up.)

Do the same with olive oil (or whatever oil you want) and make a spicy flavored oil.

You can sun-dry them or do it in a skillet over a fire. If you decide to dry them using artificial heat be very sure you do it outside. My wife has caused us all to flee the house as our bronchial passages closed and our eyes watered. She’s done this a few times and it never gets any better.

People call those jalapeno poppers? Around here “jalapeno poppers” refers specifically to chiles (usually jalapenos) stuffed with cream cheese, breaded, and deep fried. Mmmm… tasty stuff. Chiles rellenos are something else entirely, in my experience. But then, I live in Nebraska, so what do I know? :slight_smile:
