What to do with a gallon of coconut milk

I never really thought about it, but the lyrics seem to imply that lime-with-coconut is both a cause of and cure for bellyache.

I’m assuming if he’s buying it by the gallon, though, he is getting something like this (at 90 calories a cup) vs something like this, which is 420 calories a cup. They’re both called “coconut milk,” but they’re not quite the same thing.

Yeah, I read the OP too quickly. Forget my suggestions.

Oh, I think you can still use it like that, although the vanilla may throw things off, and the final results will be far, far less rich. It kind of hinges on how strong that vanilla is.

I was wondering about that too. Normal coconut milk is extremely high in fat, particularly saturated fat. No wonder it tastes so good–it is like eating melted ice cream.

While the “Silk” brand coconut milk is much better, it still is much higher in saturated fat than 1% or 2% cow’s milk (it is about the same as whole milk).

Make a pound cake substituting the coconut milk for cow’s milk, and throw in some chopped dates. Use raw brown sugar instead of white and try reducing the recommended amount of it by 2/3. Taste and add more, if desired.

You can use it for hair, I add coconut milk to my regular shampoo or conditioner, it makes my hair really soft and easier to comb.

I use it in my smoothies.

Robert Irvine’s Coconut Cashew Soup is delicious.

Riffing on this, make a batch of homemade Almond Joy ice cream!
