What to do with a Plantain?

I got a couple of really nice looking Chiquita Brand Plantains from the store and I’m planning on grilling them. Unfortunately, I’ve never cooked with nor eaten a fresh plantain. I have had plantain chips, so I know their flavor and starchieness. One is Green, the other is yellow. They had no truly black ripe plantains.

How long should I grill a green plantain? Will citrus sauces denature a plantain and make it mushy, like a banana in a honey lime yogurt fruit salad dressing??
Salt them, oil them, what?

Brush them with oil, then grill split plantains (skin on) for about 2 minutes per side. Brush with a glaze of brown sugar, honey and orange juice.

That’s more of a sweet recipe for ripe plantains. I’d like to know what to do with green plantains in a savory way.
