What to do with a ton of pistachios?

They will go bad fairly quickly at room temperature. I buy the big box of individual serving bags at Sam’s Club. Our African Grey gets two a day. I open one packet at a time and by the end of the 7-10 days it takes to go through the packet (with me stealing one occasionally) they’ve gone stale.

I’d be tempted to shell the lot and have a friend grind them into pistachio butter. Is that a thing?
