What to do with all this chicken?

Chicken nuggets- we love this at my house. Cut strips into bite-size pieces, dip in flour, then beaten egg, then panko bread crumbs, seasoned with garlic powder, onion powder, salt and pepper. Can also add grated (powdery) parmesan cheese to bread crumbs. Fry up in oil. Yum. I usually make a sauce to dip in of equal parts honey and mustard.

Cut up some green peppers.
Cut up some onions.
Buy some cherry tomatoes.
Skewer them in alternating pieces and put in a disk.
Marinate the whole thing in teriyaki sauce.
Grill.

I really don’t care much for chicken, but when my husband makes this, I salivate.

I normally do this dish with tofu, but I tried it a couple of weeks ago with some chicken tenders, and it was mighty fine:

Chop the chicken into bite-sized pieces, and cook in a large pot (or dutch oven).
Mix together some soy sauce (or tamari), peanut butter, garlic, ginger, and chili pepper flakes to make a sauce.
Put lots of kale in the pot and cover; cook down.
Add the chicken and the sauce and stir it all up.
Cook it a little until the sauce thickens.

Serve over rice (I prefer brown, but I guess white would work).
