What are Aunt, Uncle, Cousin, and so on when used as a part of a proper name? Like when I address my fathers brother Matthew as Uncle Matt, and his daughter as Cousin Esther.

Kinship terms.
If you’re using it as a direct address, “Good morning, Aunt Mary,” it’s an honorific, the same as “Good morning, Mr. Smith.”
If you’re using it to describe someone, “Oh, my Aunt Mary is over there,” it’s an adjective.
