What's Cookin' for Thanksgiving?

It was well worth; all 3 of us stuffed ourselves (also I lied to my mother about it being Dutch treat ;)). BTW on Wednesday I found she’s maker a smaller version of Thanksgiving dinner on Saturday so she has leftovers.

Now what am I going to do with all this leftover turkey?

Pretty traditional here. Except I didn’t make a pumpkin pie. Folks were nice, but clearly disappointed. Oh well, next year I’ll make a pumpkin pie.

Growing up, dad and I just ate Thanksgiving dinner over and over until it was gone. Mrs. L.A. and I did that last night. She said she could eat it every night. (Thanksgiving Day she said she wished she had two stomachs.) She asked what’s for breakfast, and I suggested Thanksgiving dinner. She said she wanted an omelette – without turkey.

Then you have your turkey sandwiches. Dad loved his sandwiches made with leftover turkey. He’d do them on Wonder bread with Miracle Whip, sliced tomato, and salt and pepper. I like mine on wheat with mayo. Or there’s a turkey melt. That’s always good, as are turkey salad sandwiches. Or try this: Warm some white-meat turkey and cook some bacon. Make a turkey, Swiss cheese, lettuce, avocado, and tomato sandwich on focaccia bread.

Turkey, mushroom, tomato, and cheese omelettes. Turkey-and-mushroom-in-Béchamel crêpes. Turkey mac. Turkey enchiladas (or tacos, for that matter). Green salad with roasted turkey. Turkey pot pie (Freeze 'em for later!). Turkey casserole.
