What's the best kind of mushroom to grow in the summer?

I have lots of wood and coffee grounds that are a disposal problem. I’d like to at least use them for growing mushrooms before throwing them out. I have a catalog advertising a number of different kinds of edible mushrooms with different nutrient and temperature requirements. I’d like to try to grow a relatively easy-to-grow, fabulous tasting kind of mushroom that grows in temperature range of 20 - 25 C. Any recommendations? How about a kind of mushroom to grown in the winter (temperature range 5 - 15 C).

Oyster mushrooms (Pleurotus spp) can be grown on a variety of substrates (hardwoods like beech are best) and they are yummy.
