My German grandmother cooked lots of organ meats, most I could tolerate, but not kidneys. These were big beef kidneys which she would leave boiling on the stove all day in preparation for dinner service. The moment you walked in the door you were hit with the stench of boiled cow urine which clung to everything in the home. Then, when the kidneys were cut to serve, there was always just a little bit of urine that hadn’t quite boiled out. The taste was much as you would expect from the previous description.
The rest of the family gobbled them up with gusto, so I will presume the preparation was a-ok
Tripe is a good candidate. Thre’s a reason it’s a synonym for anything considered low-class garbage.
