Seriously, limiting it to Olympic sports is a bit harsh, as they’re very restricted. Hacky Sack/footbag is fairly recent and has been mentioned.
Squash is 1920s or so.
Street Hockey is fairly recent, I’d guess.
Pickleball was invented in 1965. I remember dominating my high school PE class in this sport, which surprised everyone, including me, since I am quite a bad athlete.
I am also fully aware that the OP asked about stick and/or ball sports.
What I am not aware of is how Frisbee Golf qualifies as a stick and/or ball sport. But apparently you are! Please tell us how FG is a stick and/or ball sport. Thanks.
Your post was originally just the two words I quoted, and from that, there is no context as to “how is this a ball or stick sport?” It could just as well have been “there’s a game where one plays golf with Frisbees?,” which is how I read and responded.

However, I do reserve my full measure of (good natured) snarkiness for all the Frisbee posters*. I mean, doesn’t anyone read OPs anymore? I hate it when someone posts a sloppy reply without qualification, like “This isn’t exactly a ball &/or stick game like the OP asked for, but it’s close: Ultimate Frisbee.” It makes me think I got the OP wrong, and I go scambling back to the top to reread the thing.
I don’t mind qualifications, minor hijacks, or sidebar stories – just label them as such so as not to totally twist a thread away from the OP’s intent.
FTR, I love Frisbee. Ultimate Frisbee in particular.
