If you can find it, Third Watch is great. It’s not really a procedural… more like ER with better characters and plots, cops and firefighters instead of just doctors, and without 35 years or so of running out of ideas. From what I gather, it wasn’t all the popular when it was on but everyone I know who has watched it thinks it should have been.
I’d add Black Books, The Alan Partridge Show and Green Wing to ZipperJJ’s British list.
I’ll put in another push for “DEXTER”.
Sheldon isn’t gay, he’s sort of asexual. He’s highly intelligent and highly picky, but shows no sexual interest in women or men. There was an episode where they addressed this, Penny came out and asked “What’s his deal?” The guys had different theories on how Sheldon would reproduce, such as mitosis.

I’m nthing The Big Bang Theory, seconding Supernatural, and throwing in Fringe–kind of a X-Files knockoff, but still manages to be great.
I like several of the shows you have mentioned, but you’ve listed a lot so I bet most people could say that.
With that in mind, here’s some shows I really like that I don’t think I’ve seen mentioned yet:
The Pretender (my favorite show ever, too good)
Alias (strong female character, ruthless characters, double-crosses galore)
La Femme Nikita (strong female character, ruthless characters, double-crosses galore)
Profiler (pretty much started the CSI, Dangerous Minds type shows, but is actually good, and Ali Walker is fantastic (and it has that guy from Nip/Tuck in an early role))

Joan of Arcadia (similar to Buffy and Wonderfalls, but good in a totally different way)
MacGyver (well, its awesome)

This show was waaaay ahead of its time and misplaced on broadcast TV. Adrian Pasdar plays Jim Profit, nee Sakowsky, sort of an executive suite Dexter.
Slings and Arrows is a show about a Shakespearean theatre company.

American Gothic Someone’s at the door! It looks like it’s the creepy demonic sheriff of this small town.
I’m forthing Supernatural, but with this suggestion: Skip the first season and get info for it online. The first season sucks ass, save for the last few episodes (and a couple in between). Start with the second, which is much better, as is the third and forth. As I understand, Kripke will only go for five seasons, so while it’s unfinished, it’s close to over, and it’s the rare show which gets *better *every season
The suggestion of Slings and Arrows reminded me to recommend two other Canadian TV shows: Due South, and Twitch City.
If Flashpoint was on DVD already, I’d recommend it as well, but it isn’t even done with the first season yet on American TV.
Completely unrelated recommendation: Brisco County, Jr. Yet another “Damn you Fox!” show with only one season. It stars Bruce Campbell and it is awesome. That sentence is slightly redundant.

OK, I guess I managed to forget some shows I’ve seen:
Spaced (vies with Seinfeld & Deadwood for #2, funny, funny show)
Arrested Development (middle in Excellent Tier)
The Office [UK] (lower in the Excellent Tier)
Summer Heights High (lower in the Excellent Tier)
We Can Be Heroes (higher in Good, But Flawed Tier)
For the show I’m gonna watch next, I’m trying to narrow it down. Some that sound appealing to me now:

It may just come down to which one I can get easiest.
That 70s Show - Non stop laughs. Parallels Friends in the way it starts to suck in the later seasons
Scrubs* - Unique blend of sillyness and seriousness.
Futurama - You know about the new movies… right?
Freeks and Geeks* - The characters are great and the writing is amazing. They canceled this show right when it was getting interesting.
Wings - A gem from the 90s. Sitcom about pilots and airport employees.

I rented the first season of “Slings and Arrows” from Netflix. It’s only six episodes, but it’s an amazing story of producing “Hamlet” for a town’s annual Shakespeare festival. It’s funny and poignant, very well written and acted.
I finished SFU about a month ago, and I started on Dexter two days ago. I already finished season 1–it was so incredible that I stayed up the entire night watching the entire thing in one shot.
SFU was really, really good, but Dexter (the first season, at least) is just absolutely amazing.
So I guess I’d better start watching Flashpoint. Due South is one of my all-time favorites. Which led me to Twitch City & Slings and Arrows.
Brisco County Jr is actually not “completely unrelated.” It featured John Pyper-Ferguson as Pete Hutter; don’t touch his piece! He also played in Hard Core Logo–which starred Callum Keith Rennie (of* Due South* & Twitch City) and Hugh Dillon–now appearing in Flashpoint.
And Enrico Colantoni stars in Flashpoint. He was the father in Veronica Mars! (All part of the Canadian plan for world domination, no doubt.)
If you don’t like politics, *The West Wing is still definitely worth it. I’m not at all interested in politics, but I love this show. It’s intelligent, frequently laugh-out-loud funny, often moving, and I feel myself getting smarter every time I watch it.
