Edward Norton, Kevin Bacon and Johnny Depp for the guys.
Cate Blanchette, Angelina Jolie and Christina Ricci for the girls.

Another vote for Michelle Pfeiffer, also: Bridget Fonda in Jackie Brown, the toes the toes.
The fellas, Emilio Estevez and John Cusack.
Considering the dead: Anita Ekberg and Cary Grant

Edward Norton. Jude Law. Adrien Brody. (beauty-full, IMHO)
Ewan McGregor, Nicole Kidman, Brad Pitt, Jude Law, Robert Redford, Paul Newman, and Sean Connery.
Helen Hunt
Harrison Ford
Mel Gibson
Mira Sorvino
** Nicole Kidman. ** I’ll second ** Naomi Watts ** and ** Gwyneth Pawltrow ** and I’ll add ** Charlize Theron, ** given the right role.
You think Julianne Moore is hot? Wow, to each his own I guess.
Im a Sandra Bullock fan myself, and while I don’t consider her the hottest actress out there, for me she has the best combination of appeal and acting ability.
Julianne Moore is definitely hot, but I’m more impressed by the roles she chooses than her performances in them, necessarily.
As to other hotties who are good at their craft:
Ashley Judd is a very good actress, but I don’t think she chooses enough challenging roles.
Hallie Berry is consistently solid and an amazing beauty.
Carrie Anne Moss was very good in Memento, but the only other thing I’ve seen her in was Matrix, and while she was good in that as well, I don’t count two examples as a large enough base on which to judge.
Charlize Theron is consistently good, and always lovely.
Ditto for Kate Winslett.
As to the men:
Kiefer Sutherland. A very handsome man and outstanding actor. He was even good in Dark City, a movie I actively loathed.
Val Kilmer: He gives every indication of being a looney prick in real life, but his work is always top-notch (Salton Sea counts as one of my ten favorite film performances of all time) and he is very good looking.
Johnny Depp may well be the best English language actor working today, also outstanding looking.
While I never thought Mel Gibson all that good looking (but certainly not bad looking either) he’s proven himself to be an excellent actor who is willing to take on a wide range of roles and do almost all of them justice.
Sean Connery is a very handsome and distinguished looking man, but I’ve never thought him much of an actor. To me he always plays, well, Sean Connery.
John Cusack is an outstanding actor and an exceptionally good looking man. The only movie he was ever in that I didn’t like and didn’t like his performance in was Pushing Tin. I thought the whole thing was dreadful.
I may be opening a can of worms with this one, but Tom Cruise has shown himself to have very good acting abilities, given the right material and director. I don’t think he’s worth the hype or the price tag he commands, but I think he’s better than his detractors will admit.
Lastly, as to Ed Norton, I don’t think he’s good looking, and I think he’s overrated as an actor. He’s chosen very good roles for himself, but I don’t think he’s always been up to the challenge. He was just okay in American History X, but I don’t think he brought anything to the role that couldn’t have been handled by any other actor. In Red Dragon I thought he was kind of flat. His best work may have been in Death to Smoochy. The movie wasn’t great, but he made his role very believeable.
That’s all for now.
Ever seen The Astronauts Wife?
I’ll have to second the OP’s nomination of Brad Pitt. He’s an excellent comedic actor, i think. I’d also shag him…and I am a completely heterosexual man. though he’d have to be clean shaven.
Sandra Bullock, Radha Mitchell and Jessica Napier
All very yummy to me.
Part two - let’s hear it for the WOMEN!
Meryl Streep
Susan Sarandon
Faye Dunaway
Lena Olin
Juliette Binoche
Actually, no. The trailer and premise looked dumb enough, even with Depp and Charlize that I didn’t bother. Sounds like I was right.
Dolly Parton! She’s awesome.
I’ve mentioned him before, but Jason Isaacs doesn’t get nearly enough credit for his acting. He’s mostly typecast as the bad guy, but he does a fab job.
Oh, and he’s a sexy bastard too, so that helps.
