Whole Foods introduces a "Produce Butcher"

Clicking through to the article shows a case with compartments full of what looks like chopped onions, peppers, and other vegetables. I’d love to find that in my local grocery store at the end of a long day. As much as I love cooking (and even prep work), once in a while I’d happily pay a reasonable premium to buy an assortment of just enough fresh prepped veggies for one meal. My time has value, and this service could replace an hour’s prep with five minutes of shopping without the drawbacks of canned or frozen vegetables.

I’ve found that you can already get chopped vegetables in the supermarket. Many markets have little bags or plastic containers of vegetables ready for stir-frying or whatever. And the salad bar can (depending on how things are priced there) be a good way to buy prepped vegetables cheaply.
