Clarification (heh): Bowl-on–bowl-off -burner method
Thanks, Leo Bloom.
Ignore him he’s a Guest.
Wait, what?
I’m amazed that even works. Beat up the eggs mercilessly, which starts foam, but more important is that it (part of it) creates the emulsion that is the fat-water sauce. (Which is?) So you start emulsifying slowly, bit by bit (how it works with any, eg mayo) and your not swamped by all the water in the butter (which is why the clarified works .)
Two good pages, techy but for cooks:
What Is an Emulsion? A Cook’s Guide
Hollandaise sauce and the chemistry behind old and new techniques
I’m waiting for you to go pick them up, newbie
That is how I did it until I discovered that Mrs. Plant (v.3.0) inherited a double boiler.
However, it was generally considered that we were Living In Sin until we received a deviled egg plate as a wedding present.
Deviled egg plate? Like a Seder plate but all eggs?
Wow, there are a lot of derivatives of Hollandaise! I’m going to try Maltaise next time. Thanks, Leo.
“Membership” on this board is a pay status. Non paying registered posters are “guests”. If you were registered when the board went pay-to-post, when the board ceased begin pay to post, you had the opportunity to become a “Charter Member”. If you failed to keep paying and paying on time, you lost Charter Member status. Anyone who was a member prior to pay to post but didn’t pay during the pay period are also “guests” if they never started paying.
I misspoke - I think the Charter Membership was for those registered when it went Pay to post. Regardless, once the board stopped requiring payment, anyone who didn’t pay lost “member” or “Charter Member” status.
Come to think of it, I may begin putting charozit or horseradish in the middle. Humus for the non-traditional.
I’m a mere guest.

I’m a meerkat.
I wasn’t here back in those days, but I can see clearly what happened: There were certain malcontent users, even some with the coveted “Charter Member” status, who saw that others were getting an abundance of pop-up ads, embedded video ads, and pop-under ads, while those malcontents themselves were getting none of that. Can you blame them for feeling left out and neglected? So they boycotted their re-ups for a while and lost their coveted “Charter Member” status. Forever.
Such a shame.
Is hummus kosher for Passover?
Untraditional Sephardim only.
Lucky bastards.
ETA: Huevos Haminados with beautiful stencils. Also women’s stockings.
I would expect no less from Leo Bloom.
I subscribe to Charter Cable. This board is a model of technological efficiency compared to them.
Some of us live in places whose banking systems and Paypal do not like each other. Sorry…
