Why did my lotus root turn purple?

I bought some lotus root at the local asian market the other day. They were pre-cleaned and sliced about 1/4 inch thick. I wasn’t sure how to cook them, so I thought I’d experiment a bit. I put them in the wok on medium-high heat, with a touch of chili oil and MSG, and after a brief saute poured in some water to steam them. After adding the water, the roots started to turn purple! Googling has turned up nothing–not even a single mention of purple lotus root.

Does anyone know what happened?  Is lotus root some sort of pH detector?  Does it have something to do with the rust in my wok?  Is this normal, but google just has no record of it?

I looked at couple of recipes and both had the lotus root soaked in vinegar and water before cooking. My guess is it is one of those things that discolors if you don’t treat it with an acid solution, like apples and artichokes.
