Come to Chicago. Plenty of quality ceviche at decent prices if you know where to look (Las Islas Marias, in particular). Chicago may just have the best and most innovative Mexican food in America–I’m not the only one who thinks this. I just read a article in some food magazine which made this exact point, and I can believe it.
The sauce is extremely important in my opinion, but for the life of me I don’t know how to make it. I’ll ask Auora, when I get a chance. And they probably just choose the cheapest fist available. But the fist has to be deep fried, and I don’t care that that’s not healthy. I bet you you can find some websites in Baja that will tell you. Also, don’t get those cheesy Rosarita tortillas.

“Not healthy” doesn’t even begin to capture the downside of a deep-fried fist.
Houston as well has some great ceviche – you just have to know where to look. If you have to order using pidgin Spanglish and sign language, it’s a good sign the food’s gonna be decent.
