Alton Brown’s fajitas are excellent, although I cordially ignore his suggestion to take a blowdryer to the coals, blow off the ash and cook the meat on the blowdried coals. Cooking the marinated meat on the grill is plenty delicious for me :). After I cook the meat and while it rests, I put my Dutch oven directly on the coals with a lot of peppers and onions and salt and oil. They char nicely when they cook, and mixed in with the sliced skirt steak, it’s damn fine eating.
