This is my dinner-party dish.
Cut an onion in half and take of the skin. Fry the halves in olive oil until it begins to be tender.
Pour in one of the big cans of tomato sauce, and most of small box of heavy cream (you can also use half and half, although there really is no making this dish healthy).
Let that get all hot and good. Add a handful of parmasean or romano cheese and some finely chopped Italian parsley. Finally, add a glug of vodka.
Let it all heat up just a bit more and enjoy.
Fettucinie (sp?) with Pesto:
Pesto:
3/4 cup extra virgin olive oil
1/4 cup pine nuts
1/2 cup parmesean cheese (or romano)
3 tbsp basil (dried)
fresh ground black pepper
3-4 cloves of garlic (minced…or through garlic press)
Add above to blender. Toss with pasta al dente.
Excellent dish and so easy. You may improvise with the ingredients as needed.
