Your favorite non-touristy restaurant in Rome?

I’m taking the Gasses to Italy in two weeks, first stop is Rome. I want to avoid popular but touristy restaurants and instead go to more off-the-beaten-path places where more locals might go. I speak some Italian and have done well enough in areas in Italy where there is nearly no English spoken, so I don’t need the waiters to speak English, although I suppose that in Rome that’s not an issue in most places.

Our hotel is near Piazza della Repubblica.

Bonus: Same question for Florence, Cinque Terre area, Lake Como area.

I’ve got a great little (Pocket sized, 180 pages) Frommers—“Rome; Day by Day 2007” travel guide that is chock full of great places to check out in Rome, and it has a large section related to dining, and had dozens of listing for places just like you are looking for.

Its a great little book, and I think it would be perfect for use as a guidepost for your visit…
