One general guideline is you can take most pasta recipes and substitute potatoes for the pasta.
So macaroni salad can be turned into potato salad. Macaroni and cheese can be turned into potatoes and cheese. Spaghetti with meat sauce can be turned into potatoes with meat sauce. Fettuccine carbonara can be turned into potatoes carbonara. Pasta fazool can be turned into potatoes fazool. Lasagna can be turned into…
Okay, that last one shows it’s not a universal rule.
Make a big-ass batch of pierogis. They freeze beautifully, so you always have them there for whatever. The filling can be just about anything, but I really like potato and sausage using bulk breakfast sausage.
My tater salad: Add a couple teaspoons or so of apple cider vinegar to hot cooked diced potatoes. Mix in chopped bread and butter pickles or bread and butter pickle relish along with a bit of the juice. Add 3 or so chopped hard boiled eggs and salt to taste, then add just enough Duke’s mayo to hold it together.
Hamburger Potato Casserole: to your cooked diced potatoes add some cooked ground beef and a can of cream of mushroom soup. Mix well and place in a casserole dish then cover with slices of American cheese singles. Bake until heated though. It looks disgusting, but tastes great.

Cheesy Taters - add a jar of cheese whiz and some bac-o’s and bake till heated through. Top with sour cream and chives or scallions to make it into a Tater Skin Casserole.
Going to make a big, BIG pot of 3 pepper potato and ham soup today, I think. And I’m leaning toward that Stinky Potato Salad. Also leaning toward the salad Hockey Monkey described, but I have none of the ingredients except the potatoes and eggs, so will have to wait until I shop again for that.
It’s my friend’s birthday. I think I will give her about a gallon of potatoes (as well as some soup) and some the ridiculous number of cucumbers out of this morning’s harvest.
My wife cooks at a small school. Homemade potato lasagna was one of her most requested menu items a few years back. Then the state made her take it out of the rotation in favor of their preprocessed foods. (Separate rant)
Keep in mind that, properly stored, potatoes can last months without going bad. There’s no need to rush to get them cooked. Even in a home at about 72 degrees, if you put them in a dark place you should be able to keep them for over a month at least.
Remember, those potatoes you’re eating were harvested late last September or early October. The point of potatoes (and many other foods like apples and onions) is they last a good long time when stored in a cool, dark, dry place.
