3 gallons of diced, partially cooked potatoes. Go!

I’ve been going to the local food bank since I’ve been on leave of absence from Job 2 for the last 6 weeks. This week I scored…a HUGE bag of diced potatoes, slightly cooked. I’d guess 5 pounds–maybe more as I dumped it into 3 gallon-sized containers.
So…country fried potatoes was first on the list, with onions, peppers, and smoked sausage from the freezer. Probably potato soup tomorrow if the room mate can pick up a gallon of milk.
What else? We have lots of potatoes to eat…heaven forbid they go bad! :slight_smile: Thank goodness we love the darn things.

They are good in curry, if you like that sort of thing. Similar to the fried potatoes, but subtract the sausage and add curry spices and maybe some tomatoes and/or chickpeas.

Potato salad’s an obvious one.

But you can always make vodka.

Potato pancakes

Shepherd’s pie, if you have ground beef or lamb on hand.

Pioneer Woman’s mashed potatoes freeze very well.

Curry! Never thought of that…that sounds good. I’m looking for good potato salad recipes now…love it but mine is always sort of blah. And pancakes, very good.
We’re going to have fun. I’m so glad to feel like cooking again.

Aloo gobi if you also have cauliflower.

Seconded! Great with a grilled chicken breast and a side salad.

Make some of those Jewish potato cake things. (What are they called?)

Or aloo matar if you have peas. Or you can do it with spinach for “saag aloo.” Can you guess what the Hindi word for “potato” is? :slight_smile:

I’d bake 'em in a casserole with scrambled eggs and cheese
Brown a bunch and pour some spicy chili over the top
Chorizo and potato burritos
Make gnocchi and serve with marinara

A casserole sounds good…au gratin, maybe…
