A is for Apple....sauce

We bought a half bushel of apples this past weekend and this afternoon I made applesauce to can. For this first batch I just peeled and cut them, added some water and apple juice (I had it on hand) and cooked the whole batch until it was mashable. I did put some sugar into it almost at the end.
Now I’m looking for ideas for something a little more creative. I plan to do at least one more batch, so there will be at least two jars of cinnamon applesauce in the mix. Does anybody have any other ideas?

What do you add? Do you have preferences as to kind of apple? (I used all Jonathans this time.)

Also, if I have enought to do it, I’d like to do a couple pints of apple butter. Anybody care to share a favorite recipe?

Cranberries (fresh or dried). Or raisins.

Make some with apple slices, suitable for pie filling, and diced, for adding to pancakes or muffins.

Unsweetened, with herbs such as rosemary and bay (as a side dish with meats).

Those all sound like good ideas. Well, to me anyway. I don’t think I can get away with cranberries. I hadn’t thought about anything leaning toward the savory side, but it sounds interesting.
