I would say Missouri is too boring to have a sushi roll of its own, but since the paddlefish is one of the state fish (channel cat ebing the other. with several “states” alrady claiming the catfish), I’d say something with paddlefish roe and Missouri rice. Served with Budweiser. :rolleyes:

Illinois Roll - smelt wrapped in corn.

For the non fish eaters - Italian Beef wrapped in corn.

When I visited friends in Springfield, everything had “chilli” in it or on it. Is this unique to Springfield, or is it common throughout Illinois?

P.S. I enjoyed it. I started putting chili into “devilled” eggs after my visit.

Can the northeners get in on this? Seems like a Quebec roll would have to be cheese curds and gravy, wrapped in a french fry…

An Ontario roll might be some thin-sliced venison, wrapped in rainbow trout, and drizzled with maple syrup.

I say that it should be ham, wrapped in a pierogi, with some fries sticking out of the middle.

Too much potato. Besides, this is actually a Central PA roll. Let Pittsburgh and Philly get their own rolls.
